YUMMY!!!!!!!!!!! Mexican Lasagna



Supper yummy and super easy!
I don’t have a specific recipe but this one is pretty close to what I use. The great thing about this lasagna is that it is so versatile you can change it around and it will still be great. You can add all of your family’s favorites and really make it your own. I hope you guys try it out and let me know how you like it!

My Tips: I use a bag of tortillas (flour or corn) hard or soft whatever is on sale, I prefer ground turkey but you can use beef (use what you have around), I also use the Tostitos brand Queso and a bag of frozen green, yellow, red pepper stir fry mix. Since most of the ingredients are already cooked all you need is to leave it in the oven 20 minutes or so to melt the cheese. You can make extra ground turkey on the weekend, and make the lasagna during the week.

Mexican Lasagna:
· 3-4 flour tortillas
· Salsa
· Cheddar cheese, grated
· Refried beans
· Black beans
· Frozen sweet corn, thawed
· Tomatoes, diced
· Black olives, sliced
· Green onions, sliced
· Fresh cilantro, chopped
· Guacamole
Turkey Filling:
· 1 lb lean ground turkey
· 1 tsp olive oil
· 1 small sweet yellow onion, diced
· 3 cloves of garlic, minced
· 1 tsp paprika
· 1 tsp chili powder
· 1 tsp dried oregano
· 1 tsp ground cumin
· 1 tsp garlic powder
· Sea salt and fresh cracked pepper, to taste
